Keto French Toast

Real french toast flavor with a fraction of the carbs. Built on 90-second bread, dipped in cinnamon egg custard, and pan-fried in butter. Sunday morning sorted.

AIngredients
  • 2 tbspunsalted butter, melted (bread)
  • 6 tbspblanched almond flour (bread)
  • 2 tsppsyllium husk powder (bread)
  • 1 tspbaking powder (bread)
  • 1 pinchsea salt (bread)
  • 2large eggs (bread)
  • 2large eggs (custard)
  • 1 tbspheavy cream (custard)
  • 1 tspcinnamon (custard)
  • 1 tspvanilla extract (custard)
  • 2 tsppowdered monk fruit sweetener
  • 2 tbspunsalted butter (cooking)

BMethod
  1. Make 90-second bread: mix bread ingredients in a ramekin, microwave 90 seconds. Cool completely.
  2. Slice bread into 8 triangles.
  3. Whisk custard ingredients in a shallow bowl.
  4. Dip each triangle, coating both sides.
  5. Melt butter in skillet over medium heat.
  6. Cook 60-90 seconds per side until golden.
Dial-in tip
The bread MUST be completely cool before slicing or it falls apart. Make the bread the night before for even better results. Top with sugar-free maple syrup or a dusting of powdered sweetener.
