- 1/2 cupmozzarella cheese, shredded
- 1large egg
- 2 tbspblanched almond flour
- 1/2 tsppsyllium husk powder
- 1/4 tspbaking powder

- Preheat waffle maker 5 minutes.
- Stir all ingredients together in a bowl until combined.
- Pour about 1/4 cup batter into a mini waffle maker.
- Cook 3-4 minutes until browned and crispy. Steam stops = done.
- Let cool slightly on a rack to crisp up before serving.
