Keto Fluffy Pancakes
These aren't the flat, rubbery keto pancakes you've had before. Almond flour and coconut flour together create real pancake texture. Fluffy, stackable, and 3g net carbs per serving.

AIngredients
- 1 cupblanched almond flour
- 1/4 cupcoconut flour
- 2 tbspmonk fruit allulose blend
- 1 tspbaking powder
- 5large eggs
- 1/3 cupunsweetened almond milk
- 1/4 cupavocado oil
- 1 1/2 tspvanilla extract
- 1/4 tspsea salt
BMethod
- Whisk all ingredients together until smooth. Batter should be typical pancake consistency.
- Preheat a lightly oiled nonstick skillet over medium-low heat.
- Pour batter to form 3-inch circles.
- Cover with lid. Cook 1.5-2 minutes until bubbles form at edges.
- Flip and cook uncovered 1.5-2 minutes until browned.
- Repeat with remaining batter.
Dial-in tip
Medium-low heat is the key. Too hot and they burn before cooking through. The lid traps steam and makes them fluffy. Top with butter and sugar-free syrup, or go savory with cream cheese and smoked salmon.
