- 2 ozcream cheese, softened
- 1 packetstevia
- 1/2 tspground cinnamon

- Blend. Blend eggs, cream cheese, stevia, and cinnamon until smooth. Let the batter rest 2 minutes.
- Cook. Heat a non-stick pan over medium heat. Pour small rounds of batter. Cook until bubbles form and edges set, about 2 minutes.
- Flip carefully. These are thin and delicate. Use a wide spatula. Cook 1 more minute.
- Serve. Stack and top with butter, a few berries, or sugar-free syrup.
