  • 2large eggs
  • 2 ozcream cheese, softened
  • 1 packetstevia
  • 1/2 tspground cinnamon

  1. Blend. Blend eggs, cream cheese, stevia, and cinnamon until smooth. Let the batter rest 2 minutes.
  2. Cook. Heat a non-stick pan over medium heat. Pour small rounds of batter. Cook until bubbles form and edges set, about 2 minutes.
  3. Flip carefully. These are thin and delicate. Use a wide spatula. Cook 1 more minute.
  4. Serve. Stack and top with butter, a few berries, or sugar-free syrup.
