AIngredients
  • 1 lbground beef
  • 1/2 cupchopped onion
  • 2 clovesgarlic, minced
  • 1 tbspground cumin
  • 1 tspchili powder
  • 8 ozcream cheese, softened
  • 2 cansbeef broth (14.5 oz each)
  • 2 cansdiced tomatoes and green chiles
  • 1/2 cupheavy cream
  • 2 tspsalt, or to taste

  1. Brown the beef. Cook ground beef with onion and garlic in a large pot over medium-high heat until browned and crumbly, about 5-7 minutes. Drain the grease.
  2. Add the spices. Stir in cumin and chili powder, cook 2 minutes until fragrant.
  3. Melt in the cream cheese. Drop cream cheese into the pot in small pieces. Mash it into the beef with a spoon until no white spots remain, 3-5 minutes.
  4. Build the soup. Pour in beef broth, diced tomatoes with chiles, heavy cream, and salt. Stir to combine.
  5. Simmer. Cook until heated through, about 10 minutes. Taste and adjust salt.
  6. Serve. Ladle into bowls. Top with shredded cheese, sour cream, or sliced jalapenos if you want.
