AIngredients
- 4 slicesbacon, cut into 1-inch pieces
- 1.5 lbboneless skinless chicken thighs
- to tastesalt and pepper
- 1 cupchicken broth
- 8 ozcream cheese, cubed
- 1 tbspdry ranch dressing mix
- 2 cupsfrozen spinach, thawed and drained

- Crisp the bacon. Set Instant Pot to Saute. Cook bacon until crispy. Remove bacon, keep fat in pot.
- Layer the chicken. Season chicken with salt and pepper. Place in the pot. Add chicken broth.
- Add cream cheese. Scatter cream cheese cubes and ranch mix on top. Do not stir.
- Pressure cook. Lock lid, set to High Pressure for 15 minutes. Natural release 10 minutes, then quick release.
- Finish. Stir in spinach and crumbled bacon. The cream cheese will have melted into a sauce. Stir until combined.
Dial-in tip
This is a true dump-and-go recipe — 5 minutes of hands-on work. The cream cheese melts into the broth to create the sauce automatically. Serve over cauliflower rice.
