Instant Pot Bacon-Ranch Chicken
AIngredients
  • 4 slicesbacon, cut into 1-inch pieces
  • 1.5 lbboneless skinless chicken thighs
  • to tastesalt and pepper
  • 1 cupchicken broth
  • 8 ozcream cheese, cubed
  • 1 tbspdry ranch dressing mix
  • 2 cupsfrozen spinach, thawed and drained

  1. Crisp the bacon. Set Instant Pot to Saute. Cook bacon until crispy. Remove bacon, keep fat in pot.
  2. Layer the chicken. Season chicken with salt and pepper. Place in the pot. Add chicken broth.
  3. Add cream cheese. Scatter cream cheese cubes and ranch mix on top. Do not stir.
  4. Pressure cook. Lock lid, set to High Pressure for 15 minutes. Natural release 10 minutes, then quick release.
  5. Finish. Stir in spinach and crumbled bacon. The cream cheese will have melted into a sauce. Stir until combined.
Dial-in tip
This is a true dump-and-go recipe — 5 minutes of hands-on work. The cream cheese melts into the broth to create the sauce automatically. Serve over cauliflower rice.
