Fathead Crackers with Coconut Flour
AIngredients
  • 1 cupMozzarella cheese, shredded
  • 2 largeEggs, beaten
  • 1/2 cupCoconut flour
  • 1/4 tspSea salt

BMethod
  1. Preheat oven to 350°F (177°C) and line baking sheet with parchment paper.
  2. Melt mozzarella cheese in microwave or double boiler until smooth.
  3. Blend egg, coconut flour, and sea salt in food processor.
  4. Add melted cheese and blend until dough forms.
  5. Chill dough for 1 hour until firm.
  6. Roll dough between greased parchment to 1/16-1/8 inch thickness.
  7. Cut into rectangles and prick with fork to prevent bubbling.
  8. Bake 10-15 minutes until barely golden on edges.
  9. Turn off oven, prop door open, keep in 30+ minutes until darker golden.
