- 2 largeEggs, beaten
- 1/2 cupCoconut flour
- 1/4 tspSea salt
BMethod
- Preheat oven to 350°F (177°C) and line baking sheet with parchment paper.
- Melt mozzarella cheese in microwave or double boiler until smooth.
- Blend egg, coconut flour, and sea salt in food processor.
- Add melted cheese and blend until dough forms.
- Chill dough for 1 hour until firm.
- Roll dough between greased parchment to 1/16-1/8 inch thickness.
- Cut into rectangles and prick with fork to prevent bubbling.
- Bake 10-15 minutes until barely golden on edges.
- Turn off oven, prop door open, keep in 30+ minutes until darker golden.
