AIngredients
  • 1 lbPork skin
  • 1 tspSea salt, or 3/4 tsp for less salty
  • 2 inchesAvocado oil, for frying

BMethod
  1. Preheat oven to 300°F. Line baking sheet with parchment paper.
  2. Remove lard from pork skin carefully; cut skin into 1x2 inch rectangles using sharp shears.
  3. Arrange skin pieces in single layer, fat-side down. Season with sea salt.
  4. Bake 1-2 hours until dried, crispy, and golden. Drain on paper towels.
  5. Heat avocado oil to 350°F in large pot. Fry skin in small batches 1-3 minutes until puffy.
  6. Remove with slotted spoon and drain on paper towels.

Remove as much lard as possible from the skin initially to ensure the crispiest, puffiest results.
