AIngredients
- 1.5 cupsAlmonds
- 1/2 cupShredded coconut, unsweetened
- 1/3 cupGolden flaxseed meal
- 1/4 tspSea salt
- 2/3 cupPeanut butter, creamy natural, slightly runny
- 1/3 cupSugar-free maple syrup
- 1 tspVanilla extract
- 1/2 cupSugar-free dark chocolate chips
BMethod
- Place almonds in food processor and pulse until you have a mixture of chopped almonds and almond meal.
- Add shredded coconut, flaxseed meal, and salt. Pulse a couple times until uniform.
- Add peanut butter, syrup, and vanilla. Pulse again until just combined.
- Use a spatula to fold in chocolate chips and press them into the mixture.
- Use a cookie scoop to form mixture into 1-inch balls and place on parchment-lined baking sheet.
