Keto Stuffed Mushrooms
AIngredients
  • 1 lbCremini mushrooms, stems removed, about 18 pieces
  • 5 slicesBacon
  • 4 clovesGarlic, minced
  • 3/4 lbGround Italian sausage
  • 4 ozCream cheese, cut into small chunks
  • 2 tbspFresh parsley
  • 1/2 cupMozzarella cheese, shredded, divided
  • 1/4 cupGrated parmesan cheese

BMethod
  1. Preheat oven to 400°F and line sheet pan with parchment paper or foil.
  2. Place mushroom caps open-side up on pan with spacing between them.
  3. Cook bacon in skillet over medium heat until crispy; remove and set aside.
  4. Saute minced garlic in remaining bacon grease until fragrant.
  5. Add ground sausage and cook until browned; drain excess grease.
  6. Stir in cream cheese, parsley, 1/4 cup mozzarella, and parmesan until smooth.
  7. Chop bacon and stir into sausage mixture.
  8. Spoon filling into mushroom caps generously.
  9. Top with remaining mozzarella; press lightly to adhere.
  10. Bake 10 minutes until cheese is golden brown. Tent with foil and bake 10 more minutes.
