AIngredients
  • 1/2 cupAlmonds
  • 1/2 cupPecans
  • 1/4 cupPumpkin seeds
  • 1/4 cupUnsweetened shredded coconut
  • 1 tbspHemp hearts
  • 6 tbspPowdered monk fruit allulose blend
  • 1/4 tspSea salt
  • 3 tbspAlmond butter
  • 1 largeEgg, whisked
  • 1 tspVanilla extract
  • 1/3 cupSugar-free dark chocolate chips

BMethod
  1. Preheat oven to 350°F. Line 8x8 inch baking dish with parchment paper.
  2. Pulse almonds in food processor, add pecans, pulse until chopped into 1/4 inch pieces.
  3. Transfer nuts to large bowl. Stir in pumpkin seeds, coconut, hemp seeds, sweetener, and salt.
  4. Whisk together almond butter, egg, and vanilla in separate bowl. Stir into nut mixture.
  5. Fold in most chocolate chips, reserving 2 tablespoons for topping.
  6. Press mixture firmly into lined baking dish. Top with reserved chocolate chips and press firmly.
  7. Bake 15-18 minutes until edges turn darker golden brown.
  8. Cool completely in pan before lifting out and slicing into bars.

Press the mixture very firmly into the pan with parchment paper to ensure bars hold together when sliced.
