  • 1 cupshredded Cheddar cheese, shred it yourself if you can, pre-shredded has anti-caking starch that changes the texture

  1. Heat the oven. Preheat your oven to 400 degrees F (200 degrees C) and line 2 baking sheets with parchment paper. Don't skip the parchment, melted cheese welds itself to bare metal.
  2. Portion the cheese. Drop the shredded Cheddar onto the prepared sheets in 24 small heaps, leaving space between them. Each pile spreads as it melts.
  3. Bake until golden. Bake until the cheese has spread, bubbled, and turned golden brown, about 7 minutes. Watch the last minute or two, they go from golden to burnt quickly.
  4. Cool to crisp. Let the crisps sit on the baking sheets for 5 to 10 minutes before lifting them off. They come out of the oven soft and firm up as they cool.
