Keto English Muffin

A real english muffin texture in two minutes flat. Microwave it in a ramekin, split it, toast it, and load it up. Breakfast sandwiches just got keto-friendly.

Split and toasted keto english muffin with butter
AIngredients
  • 3 tbspblanched almond flour
  • 1/2 tbspcoconut flour
  • 1 tbspunsalted butter
  • 1large egg
  • 1 pinchsea salt
  • 1/2 tspbaking powder

BMethod
  1. Melt butter in a 4-inch ramekin (30 seconds microwave).
  2. Add all remaining ingredients and stir until combined. Let rest 1 minute.
  3. Microwave 90 seconds until firm. (Or bake 15 min at 350°F.)
  4. Run a knife around the edge, flip onto a plate.
  5. Slice in half and toast until golden on both sides.
