- 1/4 cupmonk fruit allulose blend (pancake)
- 2 tspbaking powder (pancake)
- 4large eggs (pancake)
- 2/3 cupalmond milk (pancake)
- 1/4 cupavocado oil (pancake)
- 1 tspvanilla + 1/2 tsp maple extract
- 10large eggs (egg layer)
- 1/2 cupalmond milk (egg layer)
- 2 lbsbreakfast sausage, sugar-free
- 1 tspmaple extract (sausage)
- 2 cupsshredded cheddar cheese
BMethod
- Preheat oven to 425°F. Line two 15x10 jelly-roll pans with parchment.
- Whisk pancake ingredients, spread into pans. Bake 12-15 min until golden.
- Whisk egg layer ingredients, pour into fresh lined pan. Bake 15 min until set.
- Mix sausage with maple extract, press into lined pan. Bake 12-16 min. Drain fat.
- Stack on parchment: pancake, sausage, eggs, cheese, pancake.
- Bake at 350°F 10 min to melt cheese.
- Cool, cut into 12 squares. Wrap individually.
Dial-in tip
Freeze wrapped sandwiches in a gallon bag. Reheat from frozen: microwave 2 minutes, then toast in a skillet for 30 seconds each side for crispiness. These keep 3-4 months in the freezer.
