Keto Breakfast Casserole

AIngredients
- 1 tspolive oil
- 1 lbbreakfast sausage
- 3 cupsbroccoli florets
- 6 clovesgarlic, minced
- 12large eggs
- 1/2 cupheavy cream
- 2 cupscheddar cheese, divided
- 2 tbspfresh parsley, chopped
- 1/4 tspsea salt
- 1/4 tspblack pepper
BMethod
- Heat oil in a skillet. Cook garlic 1 minute until fragrant.
- Add sausage, break apart, cook 10 minutes until browned.
- Preheat oven to 375°F. Blanch broccoli 5 minutes, ice bath, drain and pat dry.
- Whisk eggs, cream, half the cheese, parsley, salt, and pepper.
- Grease a 9x13 casserole dish. Spread sausage and broccoli.
- Pour egg mixture over top. Sprinkle remaining cheese.
- Bake 30 minutes until set and golden.
Dial-in tip
Swap broccoli for spinach, mushrooms, or bell peppers. Cut into 8 squares and store in individual containers. Reheats in the microwave in 90 seconds. Pairs perfectly with hot sauce.
