Low-Carb Zucchini Pasta

Spiralized zucchini tossed in olive oil with salt and pepper. The simplest possible side dish, ready in 20 minutes with 4 ingredients.

AIngredients
  • 2zucchinis, peeled and spiralized
  • 1 tbspolive oil
  • 1/4 cupwater
  • to tastesalt and black pepper
BMethod
  1. Spiralize. Use a spiralizer or vegetable peeler to create long noodle-like strands from the zucchini.
  2. Cook. Heat olive oil in a skillet over medium-high heat. Add zucchini noodles and water. Cook 3-4 minutes, tossing frequently.
  3. Season and serve. The noodles should be tender but not mushy. Season with salt and pepper. Serve immediately as a side or base for any protein.
