AIngredients
- 1 tbspolive oil
- 1 tspbutter
- 1 smallonion, chopped
- 2 clovesgarlic, minced
- 4 cupsyellow squash, peeled and cubed
- 1 tspkosher salt
- 1/2 tspblack pepper
- 1/3 cupfinely chopped almonds
- 1 cupshredded Colby-Jack cheese
- 1/2 cupheavy cream
- 2large eggs
- 1/3 cuproasted almonds, coarsely chopped
BMethod
- Prep. Preheat oven to 350°F. Grease a baking dish.
- Saute the squash. Heat olive oil and butter in a skillet. Cook onion and garlic until soft. Add squash, salt, and pepper. Cook until tender, about 8 minutes.
- Mix the custard. Whisk together heavy cream, eggs, and fine almonds. Stir in half the cheese.
- Combine. Pour the squash into the baking dish. Pour the custard over top. Top with remaining cheese and coarse almonds.
- Bake. 35 minutes until golden and bubbling. Let rest 5 minutes before serving.
