Low-Carb Yellow Squash Casserole
AIngredients
  • 1 tbspolive oil
  • 1 tspbutter
  • 1 smallonion, chopped
  • 2 clovesgarlic, minced
  • 4 cupsyellow squash, peeled and cubed
  • 1 tspkosher salt
  • 1/2 tspblack pepper
  • 1/3 cupfinely chopped almonds
  • 1 cupshredded Colby-Jack cheese
  • 1/2 cupheavy cream
  • 2large eggs
  • 1/3 cuproasted almonds, coarsely chopped
BMethod
  1. Prep. Preheat oven to 350°F. Grease a baking dish.
  2. Saute the squash. Heat olive oil and butter in a skillet. Cook onion and garlic until soft. Add squash, salt, and pepper. Cook until tender, about 8 minutes.
  3. Mix the custard. Whisk together heavy cream, eggs, and fine almonds. Stir in half the cheese.
  4. Combine. Pour the squash into the baking dish. Pour the custard over top. Top with remaining cheese and coarse almonds.
  5. Bake. 35 minutes until golden and bubbling. Let rest 5 minutes before serving.
