Low-Carb Cream of Broccoli Soup
AIngredients
  • 2 canschicken broth (14 oz each)
  • 8 ozcream cheese
  • 1 cupshredded cheddar
  • 1/4 cupbutter
  • 1 tbspminced onion flakes
  • 1 pintheavy cream
  • 10 ozcanned chicken chunks
  • 3 headsbroccoli, broken into florets
BMethod
  1. Melt the base. In a large pot, combine chicken broth, cream cheese, and butter over medium heat. Stir until cream cheese is fully melted.
  2. Add cream and broccoli. Stir in heavy cream, onion flakes, and broccoli florets. Simmer until broccoli is tender, about 15 minutes.
  3. Add protein. Stir in canned chicken chunks. Cook 5 more minutes.
  4. Finish. Stir in cheddar cheese until melted. Season with salt and pepper.
