Easy Spinach Artichoke Dip
AIngredients
  • 2 tspOlive oil
  • 4 ozFresh spinach
  • 4 ozCream cheese
  • 2 tbspMayonnaise
  • 2 tbspSour cream
  • 2/3 cupMozzarella cheese, shredded, divided
  • 1/4 cupGrated parmesan cheese
  • 1 can (14.5 oz)Artichoke hearts in water, drained, chopped, squeezed dry
  • 4 clovesGarlic, minced
  • 1/4 tspBlack pepper

BMethod
  1. Heat oil in medium skillet over medium heat. Add spinach and cook 2-3 minutes until wilted. Set aside to cool.
  2. Preheat oven to 350°F (177°C).
  3. Heat cream cheese until soft. Add mayo, sour cream, half the mozzarella, parmesan, artichoke hearts, garlic, and black pepper. Stir to combine.
  4. Once spinach is cool, squeeze out excess liquid. Add to artichoke mixture.
  5. Transfer to small ceramic dish. Smooth top and sprinkle remaining mozzarella on top.
  6. Bake 20-30 minutes until hot and bubbly. Serve warm.
