Peanut Butter Fat Bombs
AIngredients
  • 1 cupNatural peanut butter, salted, slightly runny
  • 6 tbspUnsalted butter, melted
  • 1 tspVanilla extract
  • 1/2 tspSea salt, to taste
  • 2/3 cupPowdered monk fruit allulose blend
  • 2/3 cupPeanut flour, no sugar added
  • 6 ozSugar-free dark chocolate chips

BMethod
  1. Line baking sheet with parchment paper.
  2. Combine peanut butter, melted butter, vanilla, and sea salt; beat until smooth.
  3. Mix in sweetener and peanut flour until fully combined.
  4. Refrigerate 20 minutes if mixture is too sticky.
  5. Use cold hands and a cookie scoop to shape balls; place on baking sheet.
  6. Chill peanut butter balls for approximately 20 minutes until firm.
  7. Melt chocolate chips using a double boiler, stirring occasionally.
  8. Insert toothpick into each ball and dip into melted chocolate.
  9. Place dipped balls back on sheet, remove toothpicks, and smooth tops.
  10. Refrigerate for approximately 30 minutes until chocolate is firm.
