AIngredients
- 1.5 cupsUnsweetened coconut chips, raw
- 1/3 cupPumpkin seeds
- 1/3 cupSunflower seeds
- 1 tbspChia seeds, or flax seeds
- 2 tbspPowdered monk fruit allulose blend, optional
- 1/4 cupSugar-free honey substitute
- 1 tbspCoconut oil, melted
- 1/4 tspSea salt
BMethod
- Preheat oven to 350°F (176°C). Line baking sheet with parchment paper.
- Mix coconut chips, pumpkin seeds, sunflower seeds, chia seeds, and sweetener in large bowl.
- Add keto honey, coconut oil, and sea salt; toss to coat.
- Use cookie scoop to place mixture on baking sheet, 1 inch apart, about 2 teaspoons per piece.
- Bake 7-8 minutes until coconut is dark golden brown on edges.
- Cool 5-10 minutes until warm but not hot, then pinch clusters back into shape.
- Allow clusters to cool completely on pan until crisp.
