AIngredients
  • 1.5 cupsUnsweetened coconut chips, raw
  • 1/3 cupPumpkin seeds
  • 1/3 cupSunflower seeds
  • 1 tbspChia seeds, or flax seeds
  • 2 tbspPowdered monk fruit allulose blend, optional
  • 1/4 cupSugar-free honey substitute
  • 1 tbspCoconut oil, melted
  • 1/4 tspSea salt

BMethod
  1. Preheat oven to 350°F (176°C). Line baking sheet with parchment paper.
  2. Mix coconut chips, pumpkin seeds, sunflower seeds, chia seeds, and sweetener in large bowl.
  3. Add keto honey, coconut oil, and sea salt; toss to coat.
  4. Use cookie scoop to place mixture on baking sheet, 1 inch apart, about 2 teaspoons per piece.
  5. Bake 7-8 minutes until coconut is dark golden brown on edges.
  6. Cool 5-10 minutes until warm but not hot, then pinch clusters back into shape.
  7. Allow clusters to cool completely on pan until crisp.
