AIngredients
- 1 largechicken breast (8 oz), butterflied into 2 cutlets
- 1large egg
- 1 tbspheavy cream
- 1.5 ozpork rinds, finely crushed
- 1 ozgrated Parmesan cheese
- 1/2 tsp eachsalt, garlic powder, Italian seasoning, black pepper, red pepper flakes
- 1 tbspghee or butter
- 1/2 cuplow-sugar marinara sauce
- 1/4 cupshredded mozzarella

- Set up the breading. Whisk egg and cream in one dish. Mix crushed pork rinds, Parmesan, and all seasonings in another.
- Bread the chicken. Dip each cutlet in egg wash, then press firmly into the pork rind mixture on both sides.
- Pan-fry. Heat ghee in a skillet over medium-high heat. Cook cutlets 3-4 minutes per side until golden and crispy.
- Add toppings. Spoon marinara over each cutlet, top with mozzarella. Cover the pan and cook 2 more minutes until cheese melts.
- Serve. Plate immediately. The crust stays crispiest when served right away.
