Keto Chicken Parmesan

Crispy pork rind-crusted chicken breast topped with marinara and melted mozzarella. All the flavor of the classic, none of the breadcrumbs.

AIngredients
  • 1 largechicken breast (8 oz), butterflied into 2 cutlets
  • 1large egg
  • 1 tbspheavy cream
  • 1.5 ozpork rinds, finely crushed
  • 1 ozgrated Parmesan cheese
  • 1/2 tsp eachsalt, garlic powder, Italian seasoning, black pepper, red pepper flakes
  • 1 tbspghee or butter
  • 1/2 cuplow-sugar marinara sauce
  • 1/4 cupshredded mozzarella

  1. Set up the breading. Whisk egg and cream in one dish. Mix crushed pork rinds, Parmesan, and all seasonings in another.
  2. Bread the chicken. Dip each cutlet in egg wash, then press firmly into the pork rind mixture on both sides.
  3. Pan-fry. Heat ghee in a skillet over medium-high heat. Cook cutlets 3-4 minutes per side until golden and crispy.
  4. Add toppings. Spoon marinara over each cutlet, top with mozzarella. Cover the pan and cook 2 more minutes until cheese melts.
  5. Serve. Plate immediately. The crust stays crispiest when served right away.
