Keto Broccoli Cheddar Quiche
A buttery almond flour crust filled with roasted broccoli, sharp cheddar, and silky egg custard. Classic quiche flavor with a fraction of the carbs. Equally good hot or cold.

AIngredients
- 1 1/2 cupsblanched almond flour (crust)
- 1/4 cupcold unsalted butter, cubed (crust)
- 1large egg (crust)
- 1/2 tspsea salt (crust)
- 1 tbspolive oil (filling)
- 2 clovesgarlic, minced
- 2 cupsbroccoli florets
- 1/4 cupwater
- 5large eggs (filling)
- 1/3 cupheavy cream
- 1/2 tspsea salt (filling)
- 1/4 tspblack pepper
- 1 cupshredded cheddar cheese
BMethod
- Preheat oven to 350°F. Mix crust ingredients, press into a 9-inch pie dish. Bake 12 minutes until lightly golden. Cool 15 min.
- Saute garlic in olive oil 30 seconds. Add broccoli and water, cover, cook 5 min until tender. Cool 10 min.
- Whisk eggs, cream, salt, pepper. Stir in cheese.
- Arrange broccoli in crust. Pour egg mixture over top.
- Shield crust edges with foil. Bake 30-35 min until center is set.
- Cool 10-20 min before slicing.
Dial-in tip
The crust bakes better if the butter is cold. Refrigerate it 10 minutes before blind-baking if your kitchen is warm. This quiche is excellent cold the next day, making it ideal for packed lunches.
