Keto Beef Egg Roll Slaw
All the flavors of an egg roll without the wrapper. Ground beef with shredded cabbage, sesame oil, and soy sauce. Done in 30 minutes, one pan.

AIngredients
- 2 tbspsesame oil
- 1/2 cupdiced onion
- 5green onions, chopped (whites and greens separated)
- 3 clovesgarlic, minced
- 1.5 lbground beef
- 1 tbspsriracha or chili-garlic sauce
- 1/2 tspground ginger
- to tastesea salt and black pepper
- 14 ozcoleslaw mix (one bag)
- 3 tbspsoy sauce
- 1 tbspapple cider vinegar
BMethod
- Start the aromatics. Heat sesame oil in a large skillet over medium-high heat. Add diced onion, white parts of green onions, and garlic. Cook until fragrant, about 5 minutes.
- Brown the beef. Add ground beef, sriracha, ginger, salt, and pepper. Cook until browned and crumbly, about 5 minutes.
- Add the slaw. Stir in the entire bag of coleslaw mix, soy sauce, and apple cider vinegar. Toss everything together.
- Cook until tender. Saute until the coleslaw is wilted but still has a little crunch, about 4 minutes.
- Finish. Top with the reserved green onion tops and a drizzle of sesame oil.
Dial-in tip
At 10g net carbs this is on the higher end for strict keto. If you want to bring it down, use half the coleslaw mix and add shredded zucchini instead. Leftovers reheat perfectly for lunch the next day.
