Roasted Buffalo Cauliflower

  • 0.33 cup Buffalo wing sauce (such as Franks RedHot)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter
  • 1 head cauliflower, broken into small florets
  • 0.25 cup grated Parmesan cheese

  1. Heat the oven. Preheat your oven to 375 degrees F (190 degrees C).
  2. Make the sauce. Combine the Buffalo sauce, olive oil, and butter in a large microwave-safe bowl. Microwave until the butter melts, 30 seconds to 1 minute, then stir it all together.
  3. Coat the florets. Add the cauliflower florets to the bowl and toss until every piece is coated in sauce.
  4. Spread them out. Arrange the cauliflower in a single layer on a rimmed baking sheet. Crowded florets steam instead of roast, so give them room.
  5. Roast the cauliflower. Bake for 30 minutes.
  6. Add the Parmesan. Sprinkle the Parmesan over the top and keep baking until the cheese is slightly toasted, about 10 minutes more.
