  • 1.5 pounds ground beef
  • 1 onion, diced
  • 0.5 (4 ounce) can diced jalapeno peppers
  • 1 (1 ounce) package taco seasoning mix
  • 2 cups shredded lettuce
  • 1 tomato, chopped
  • 0.5 cup shredded reduced-fat Cheddar cheese
  • 0.25 cup salsa
  • 0.25 cup low-fat sour cream
  • 1 avocado - peeled, pitted, and sliced

  1. Brown the beef. Cook the ground beef, onion, and jalapenos together in a skillet over medium-high heat, stirring, until the meat is browned and crumbly, 7 to 10 minutes.
  2. Season the meat. Stir in the taco seasoning, bring the mixture to a simmer, and cook until the flavors come together, about 5 minutes.
  3. Toss it together. In a large bowl, combine the meat mixture with the shredded lettuce, tomato, Cheddar, salsa, and sour cream. Yes, warm meat wilts the lettuce a little, that's part of what makes these taco bowls work.
  4. Serve it up. Divide the mixture among 4 bowls and top each one with avocado slices.
