Keto Berry Pecan Cheesecake Bars
AIngredients
  • 1 cup pecans
  • 1 teaspoon stevia-erythritol sweetener (such as Truvia)
  • 1 teaspoon cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons melted butter
  • 1 egg
  • 12 ounces cream cheese
  • 0.5 cup stevia-erythritol sweetener (such as Truvia)
  • 0.25 cup sour cream
  • 0.5 teaspoon vanilla extract
  • 0.25 cup unsweetened almond milk
  • 1 tablespoon melted butter

  1. Heat the oven. Preheat your oven to 350 degrees F (175 degrees C).
  2. Make the crust. Pulse the pecans in a food processor until they're very finely chopped, then add 1 teaspoon of sweetener, the cinnamon, and the nutmeg and process a few seconds more. Tip the mixture into a bowl, stir in 2 tablespoons of melted butter, and press it into the bottom of a divided brownie pan with the divider removed.
  3. Beat the filling. Beat the egg in a large bowl with an electric mixer until it's fluffy, then work in the cream cheese 1 ounce at a time, beating until smooth. Add the 1/2 cup of sweetener, sour cream, vanilla, and almond milk and beat until the filling is silky, then stir in 1 tablespoon of melted butter.
  4. Assemble and divide. Pour the filling over the crust, then insert the divider back into the pan.
  5. Bake the bars. Bake for about 35 minutes.
  6. Simmer the berries. While the bars bake, heat a small pot over medium heat. Add the frozen berries and 1 tablespoon of sweetener and bring to a simmer, about 5 minutes. Crush some of the berries with a spoon so they release their juices, then cook about 10 minutes more until saucy.
  7. Cool and top. Let the bars cool in the pan, about 1 hour, then spoon the berry sauce over the top.
