Easy Low-Carb Keto Broccoli Cheddar Soup
AIngredients
  • 1 teaspoon butter
  • 3 cloves garlic, minced
  • 2.5 cups vegetable broth
  • 3 cups chopped broccoli
  • 1 cup heavy whipping cream
  • 3 cups shredded Cheddar cheese
  • 2 slices bacon, chopped and cooked
  • salt and ground black pepper to taste

BMethod
  1. Cook the garlic. Melt the butter in a saucepan over medium heat, then add the minced garlic and cook until it's tender and fragrant, about 2 minutes.
  2. Build the base. Pour in the vegetable broth and heavy cream, then add the chopped broccoli.
  3. Simmer the broccoli. Bring everything to a boil, then drop it to a simmer until the broccoli is tender, about 15 minutes.
  4. Melt the cheese. Add the Cheddar a handful at a time, stirring constantly so each addition melts fully before the next goes in. Dumping it all at once is how you get a grainy, clumpy soup.
  5. Finish and season. Stir in the cooked bacon pieces, then season with salt and pepper to taste. Serve it hot.
