- 1 teaspoon butter
- 3 cloves garlic, minced
- 2.5 cups vegetable broth
- 3 cups chopped broccoli
- 1 cup heavy whipping cream
- 3 cups shredded Cheddar cheese
- 2 slices bacon, chopped and cooked
- salt and ground black pepper to taste

- Cook the garlic. Melt the butter in a saucepan over medium heat, then add the minced garlic and cook until it's tender and fragrant, about 2 minutes.
- Build the base. Pour in the vegetable broth and heavy cream, then add the chopped broccoli.
- Simmer the broccoli. Bring everything to a boil, then drop it to a simmer until the broccoli is tender, about 15 minutes.
- Melt the cheese. Add the Cheddar a handful at a time, stirring constantly so each addition melts fully before the next goes in. Dumping it all at once is how you get a grainy, clumpy soup.
- Finish and season. Stir in the cooked bacon pieces, then season with salt and pepper to taste. Serve it hot.
